Vintage

It is done in boxes of 15 kg, by hand and passed to a cold room at 10 degrees to lower the temperature of the grapes, then selected on the tape with a strict and meticulous examination of the clusters, to ensure the best quality.


Maceration

The maceration is done in cold for about 7 days, in this way we respect the personality that our old vineyards give us, so that it spontaneously begins.


Fermentation

The alcoholic fermentation takes place in a stainless tank, with two shirts that allow us full control of the fermentation.

The malolactic fermentation is done 100% in French oak Bordeaux barrels, with breeding on lees, to give more sweetness to the wine. The Bordeaux French oak barrel is in which rests our wine for a period between 14 and 16 months.

FRENCH OAK OWNED BARRELS


 

The French oak forces to cut it by cleft, following the trajectory of the medullary rays, to avoid its soft parts. Gustatively it has a softer aroma and flavor, with a vanilla hue, so it is highly valued.
